The project "Securing the antioxidant potential of co-products from the processing of therapeutic plants and spices", which was conducted at the Institut für Lebensmittel- und Umweltforschung, has been published in the Innovation Catalogue.
In the course of the project it was proved that
- Selected co-products from the processing of therapeutic plants and spices have an antioxidant potential and therefore represent a valuable resource for antioxidants,
- A degree of production of extracts with antioxidant effect can be achieved which is indeed of practical relevance,
- The extracts are suitable for application and in relevant test systems exerted protective antioxidant effects
Process and product specifications have been established for the extracts with effective antioxidant effects.
